Don’t peel the potatoes!
To the editor:
In the photo showing the wonderful volunteers peeling thousands of potatoes for the Farm 2 Fork fundraiser I have one word. Stop!
You are throwing away all the most wonderful nutrients a potato contains. Potato skin contains more iron than the flesh. The skin on also helps nutrients in the potato keep from escaping. It is also an excellent source of vitamins B and C and contains fiber. Just scrub to remove any bacteria and/or chemicals (if not organically grown).
Never mind peeling is a waste of time that could be better spent elsewhere.
