On the horizon, Early Dawn Confections

SARANAC LAKE — Jill Zagrobelny has been selling her baked goods at farmers markets on and off since 2011. Soon, she and her husband Mark will open a permanent location downtown.

Planned to open sometime in late 2019, Early Dawn Confections will sell baked goods out of 28 Woodruff St., which is currently apartments.

Jill said the business will be a traditional bakery, selling all the same pastries and other baked goods her customers have gotten to know her for at farmers markets. That means goodies like scones, apple fritters, croissants done a bunch of different ways — both sweet and savory, and cinnamon buns made with croissant dough.

Mark will handle the business side of things as needed, he said. He also works as chief sampler. His favorite of Jill’s pastries are crullers — old-fashioned, cake-style twisted donuts. Jill said they’re always in the freezer at home.

“I want them to feel like they’re coming to visit at my house,” Jill said. “You know, it’s just like going to see a neighbor.”

The building at 28 Woodruff is currently separated into apartments. Jill said renovations will be coming late this summer to open up the bottom floor space.

Jill said she plans to hire one full-time position and two part-time positions to work at the bakery.
